Historic EuropeanHistoric European Chocolate Elixirs

Kakawa's European elixirs are historically based recipes. They are derived from historical documentation from the early 1600s through the early 1800s, and include a wide spectrum of flavors and intensity. Taken together, they describe the culinary back and forth that occurred after the Europeans arrived in the Americas.

One of the first things the explorers in Central America brought back to the courts to Europe was chocolate. This amazing and novel food quickly became fashionable among the elite, and the various powers adapted it to suit their tastes. Meanwhile, colonial Europeans brought their own changes to the way chocolate was consumed in the Americas.

We have created many elixirs from this period. Our more popular include a 17th Century Spanish drinking chocolate from Spain's "Golden Age", the Marie Antoinette - an elixir preferred by the French court, and the Jeffersonian, taken verbatim from Thomas Jefferson's list of preferred chocolate recipes.

In general, the European drinks are slightly sweeter and more floral than the Mesoamerican drinks. Most of them are still made with water and all of them are as delicious, unique, and addictive as they were centuries ago.

Representative of the historic drinking chocolate of the extravagant Italian court of Tuscany from the 1660s to the late 1700s. Francesco Redi, a scientist, poet, physician and apothecary to Cosimo III de' Medici, the Grand Duke of Tuscany, created several perfumed additions to chocolate including this one which has fresh citrus zest. It is a deep, mysterious and bright flavored chocolate. Traditionally made with water. Ingredients: 72% Chocolate, Lemon & Orange zest, Raw Unprocessed Cane Sugar, Ceylon Cinnamon & Mexican Vanilla.

Representative of the historic drinking chocolate of the French court of Versailles from the 1670s through the late 1700s. Lavender, grown throughout France was used as scent and perfume and as an ingredient in food and chocolate. This is an accurate example of how genteel chocolate was prepared in Baroque France - highly scented, exotic and semisweet. A blend of 72% dark chocolate, New Mexican Lavender & Mexican Vanilla. Made in house with almond milk.

1790s Jeffersonian Elixir

Representative of the historic drinking chocolate of the American colonies from the early 1700s to the mid 1800s. The first chocolate company in America was started by the Walter Baker Co. in Massachusetts in 1765. Thomas Jefferson loved chocolate and consumed it at Monticello. Due to its expense American drinking chocolate was simplified with less chocolate used. The drink became thinner and sweeter then European chocolate. Modern American hot chocolate is a direct descendant of this historic evolution. This semisweet chocolate is the essence of delicious flavor simplicity. Blended in house with Almond Milk. Ingredients: 72% Chocolate, Raw Unprocessed Cane Sugar, Nutmeg, Mexican Vanilla.

Representative of the historic drinking chocolate of the French court of Versailles during the reign of Marie Antoinette from the 1770s until her death in 1773. Marie brought her own recipe for drinking chocolate with her from Vienna to the Royal Court of France. 72% Chocolate, Orange Blossom Water, Raw Unprocessed Cane Sugar, Ceylon Cinnamon, Mexican Vanilla and Culinary Orange Blossom Essential Oil.
